Santomas Syrah

Another independent filling of Syraha in the Santomas cellar.
Grapes come from a 15 -year -old vineyard, western location. Very low load on the cane to make the grapes reach an opimal maturity. The harvest was held in mid -September in containers, which were immediately transported to the refrigerator.
Hand -picked grapes, cool overnight. The grapes were read at the reading table, without molding, the vinifiers go for fermentation between 25 and 30 ° C for a period of two weeks. After the congestion, the wine matures for a couple of months on dead yeasts, where it also completes biological breakdown, then it goes to 24 monthly ripening into 225l and 350l wooden soda from French oak.
It is purple with red shades. The smell is youthful, spicy with floral notes, it tastes very full, juicy, medium -pronounced acid and beautifully rounded tannins.
