Secondary fermentation takes place for at least 20 months.<\/p>\n<p>It is yellow with shades of green. The bubbles are fine and numerous. Youthful and ripe aromas of cinnamon, cloves, roasted hazelnuts and bread crust intermingle.<br \/>\nOn the palate it is very dry, with a rich, complex flavour.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>The classic method.
