Gordia
Gordia is the name of the area above Ankaran, where Andrej Čep has a tavern of the same name in the village of Kolomban.
He farms approximately 5ha of certified organic vineyards, mainly on lagoon soil. All the wines are produced without the use of oenological products, using only sulphur. Only indigenous yeasts are used for fermentations. The wines are produced without the use of oenological products, except sulphur, and bottled without filtration.
In the beginning, he mainly produced long macerated white wines, aged in barriques, but since 2019 more and more of his wines are aged in clay amphorae buried in the ground. He says that both white and red wines are more elegant.
Today, in addition to more structured wines, he also produces an excellent fresh Malvasia each year, as well as two five-nat sparkling wines.
