Description

The wine is certified organic. The winemaker's philosophy is to harvest as late as possible until full phenolic ripeness. This is followed by 30 days of maceration in a clay amphora at an uncontrolled temperature, with the winery's own yeasts harvested in the pre-fermentation period.

Then 80% of the wine is aged in amphorae and 20% in used oak barrels for about 36 months. It is bottled unfiltered and naturally clarified.

Deep deep red colour, the florality is reminiscent of figs, prunes, dark chocolate. On the palate it is dry, very rich but harmonious with beautifully ripe tannins from one of the sunniest vineyards in the country.

Gordia

Gordia is the name of the area above Ankaran, where Andrej Čep has a tavern of the same name in the village of Kolomban.

He farms approximately 5ha of certified organic vineyards, mainly on lagoon soil. All the wines are produced without the use of oenological products, using only sulphur. Only indigenous yeasts are used for fermentations. The wines are produced without the use of oenological products, except sulphur, and bottled without filtration.

In the beginning, he mainly produced long macerated white wines, aged in barriques, but since 2019 more and more of his wines are aged in clay amphorae buried in the ground. He says that both white and red wines are more elegant.

Today, in addition to more structured wines, he also produces an excellent fresh Malvasia each year, as well as two five-nat sparkling wines.
