Description
Organic production.
Wine made from old Istrian varieties. The grapes of the three, cyprus, port refoška and maločrna grapes are macerated in a vat for 5 days, after which the mash is sprayed and transferred into wooden barrels, where alcoholic fermentation and biological decomposition continue. The other varieties represented in this wine are then added. After a year on the lees, the wine is transferred to a stainless steel tank where it settles naturally. Once it has reached the appropriate level of clarity, it is bottled without filtration.
The bouquet is aromatic, slightly spicy, and the colour is not strongly black, as Epulona varieties do not have as many colouring agents. In the mouth it is dry, dense, fruity, with a phenolic ripeness and lower acids. An excellent, distinctive, different Istrian red wine.
