Pinela brut

The desire to discover as many faces of the autochthonous pinela as possible led the Štokelj family to the sparkling quince. They have chosen the classic Champagne production method because they believe that this is how the excellent predispositions of the quince come out best.

For the base wine, the grapes were immediately chilled and fermented at 13-15 ºC in inox tanks. Secondary fermentation took place for 20 months in bottle.

It has a delicate lemon colour and the numerous bubbles are quite small. The bouquet is delicate, ripe, yeasty, the varietality is present in the background, it is dry on the palate, with plenty of lively acids, lighter in body.
