Description

The cooled grapes macerate for 48 hours, then the grapes are compressed at low flooring. This is followed by alcoholic fermentation at controlled temperature.

Part of the wine ripens in oak barrels and part in stainless steel. After a year, the wines are flowing and combining them.

White Caroline's color is golden yellow. The nose is accentuated, with a detectable scent of coconut, caramel and overripe fruits. In the mouth, the wine is dry, dense, with just the right amount of acid. Discrete aromas of ripening on the yeast are also detectable.

The Jakončič farm dates back to 1847, when Mihael and Carolina Jakončič planted the first vineyards in the village of Kozana in Goriška Brda, thus laying the foundation for the family winery.

The experience of the elderly guides the impatience of the young, and the farm is very proud that parents and children share the care of the vineyards, winemaking and marketing. Dad Igor and mum Danica’s deep desire to achieve high quality wines has also succeeded in guiding both sons, Aljosa and Mitja, to university education in wine and viticulture.

This was followed by the highest medals and awards from international competitions at home and abroad. Each high award became their soul food. They knew it was the right path. Today, they realise that the journey never ends, each vintage is a new beginning, a new test, a new challenge, and they await each harvest with more trepidation and excitement than the first day of school. This is the charm of their lives.
