Pinot gris

Organic production,

After the harvest of the very ripe grapes, a 7-day maceration at an unconfined temperature follows. The alcoholic and malolactic fermentation takes place in old wooden barrels, where it is then matured on fine lees for a year. This is followed by a transfer to inox tanks, where natural sedimentation concentrates the wine, followed by bottling without filtering. Minimal use of sulphur.

It is brownish amber in colour, with a nose dominated by ripe cherry. It is soft in the mouth from start to finish. There is a pleasant warmth from the alcohol and fine tannins, which support the wine's already contrete structure well.
