Merlot

After a 3 week maceration with indigenous yeasts, the wine is matured for a long time in new oak barrels (5 years) to round off the sharp edges caused by the long maceration and new barrels and to make the wine smoother, nicer and rounder. The wine is on the lees all the time and is not racked, so there is no flow on the lees.

It is a deep, ruby red colour. The aromas are intense, with notes of black cherry, mulberry and plum, and finally vanilla, cedar and smoke. On the palate it is dry, soft and quite warm. Mineral, bold and full-bodied, it reflects the blossom of ripe fruit, herbs, sweet spices and smoke.
