White wines

The production of white wines in Slovenia is rich and varied, accounting for 70% of total production, with several wine-growing regions contributing to the different tastes and characteristics of the wines.

The production of white wines involves several steps. First, the grapes are harvested, then pressed to extract the juice, called must. The must is clarified if necessary to remove particles of solid matter such as stems and skins. This juice is then fermented, which means that the natural sugars in the wine are converted into alcohol. This requires yeasts, which can be selected or rely on yeasts present on the berries. (indigenous) Yeasts convert sugar into alcohol and carbon dioxide. The fermentation temperature is important. A lower temperature usually means freshness and fruity aromas. After fermentation comes the ageing process, where the wine matures and develops its flavour. The wine is filtered to remove sediment and bottled. Important factors in this process are the grape variety, the climate, the terroir and the production techniques, which influence the final taste and quality of the wine.
