Sivi pinot Ambra

After the harvest, a 5-day cryo maceration follows. Fermentation takes place at controlled temperature with indigenous yeasts.
This is followed by 10 months of maturation on lees, 70% in oak barrels, 30% in eggoist concrete eggs.
It has a deep orange colour, youthful, fresh flowers, smoke, cinnamon, which is a characteristic of mature Pinots. Medium acidity on the palate, juicy, fresh, medium intensity.
Recommended with classic risotto, salmon, grilled prawns too.
