The grapes perform 24 to 48 hours of cold maceration to extract as much aromatic potential from the strawberry. Fermentation takes place in stainless steel vessels at a temperature of 13-16 ° C. At an alcoholic level of 11 % ox, the fermentation is stopped to maintain enough natural sugar after which this wine is known.
