Description

After the harvest in mid-September, 12 hours of cryo maceration follow. This is followed by fermentation with controlled temperature and indigenous yeasts, and then maturation for 9 months in 500l. oak barrels.

It is golden yellow in colour, with aromas of honey, yellow rose and straw, joined by hints of wild mint, buttery dough, vanilla and almond. It refreshes the palate, leaving a mineral edge and a tartness that finishes with a slight spiciness.
